I was at the Atlanta Thrashers hockey game and a guy in front of me had a big plate of nachos he had just purchased. Shortly after he sat down with his newly acquired nachos, the Thrashers scored a goal…in the excitement and celebration his buddy next to him knocked the nacho plate out of his hand. Doh!!!

Makes 2 - 4 servings. To make this dish, you will need the following ingredients:
The core ingredients:
- 1 small white onion
- 1 small can of olives
- 1/2 block of cheese (150 grams)
- 1 bag of nacho round chips
- 4 - 6 white or brown mushrooms
- 1/2 a small zucchini
- 2 small jalapenos chopped
- 1 package veggie groundround (optional)
- 1/2 green pepper
- 1 diced tomato
The sides: - salsa - sour cream - guacamole
Preparation:
1) Dice white onion and green pepper into small pieces. Amount of onion used is based on amount you prefer!
2) Slice mushrooms into small cubes
3) Slice zucchini into thin cubes
4) Grate cheese on to separate plate
5) Open can of olives
6) Open bag of nacho chips
Cooking:
1) Heat oven to 300 degrees F
2) Spread nacho chips evenly on baking sheet
3) Spread onions, mushrooms, olives, and zucchini evenly across the chips. Use as much or as little as you like of each.
4) Spread cheese evenly on top of everything
5) Place in the oven
6) Keep an eye on the chips every few minutes. When the cheese has melted you can take them out. It is important to make sure the chips don’t start to burn!
